Peach Galette

Stone season (summer) is one of my favorite times of the year. I can't wait for the fruit to start to ripen and show up in the farmers markets. It makes me so excited!

This "pie" is a lot less sweet, and actually much faster and easier to make than a traditional "American" pie. It also is more rustic but glam at the same time as you can arrange the fruit to look just so beautiful.





Here's what you'll need:


1 pie dough crust (I used store bought pie dough)

3-4 ripe peaches

1/2 cup of vanilla pastry cream (check out the recipe in my blog)


  1. Unroll the pie dough or roll out your homemade dough too desired size. 🍑 Place dough onto a baking pan lined with parchment paper

  2. Spread the pastry cream evenly on the pie dough. You only need a nice thin layer to allow the peaches to stick.

  3. Arrange the cut peaches to your desire

  4. Bake in oven 400* until nice and golden. I like my edges crispy and my fruit to be slightly charred. Don’t be afraid to cook your galette!

You can serve either warm or room temperature. Slice and serve plain or with a nice scoop of ice cream.
